餐飲空間設計｜俄羅斯-Meryane 梅莉安餐廳

In the process of working together with the customer we realized that for us in this project it was important to create a design that seemed to take us on a journey through centuries of history. We used a variety of materials and techniques that helped immerse guests in an atmosphere of mystery and references to ancient times. Looking at the reflections in stainless steel, art objects frozen in translucent resin and finding passwords in unexpected places in the interior, guests are immersed in the atmosphere of Merjan times.

On the first floor it was possible to place the main hall with a contact bar area and open kitchen, as a result the process of food preparation turned into one of the main attractions of the restaurant. The second floor – more chamber and disposing atmosphere for relaxation and socializing. Various seating options – at the bar counter, in sofa areas, benches and comfortable armchairs, as well as at large communal tables – provide a capacity of 64 visitors in the restaurant. On the basement floor is located the main workshop area of the kitchen and sanitary facilities.

Upon entering the compact lobby, guests are greeted by a mountain of stones in a dimly lit and lushly textured space. Upon closer inspection, it becomes clear that these “boulders” are an allusion to an ancient animal trap. Each stone has its own special role in this form: one serves as a bait, another as a trap lid tied with jute, the third as a continuation element.
The hostess stand reminds of the relationship between man and nature, how ancient tribes used traps for survival and how much they depended on the world around them. Each boulder carries its own meaning, encouraging the guest to look deeper into the establishment and reflect on the roots and connection to the past.

The whole space of the restaurant resembles a house, in which historical and modern layers are layered. For starters, the reference to the hut is striking: we kept the oak beams on the ceiling and supplemented them with carved planks, somewhat similar to the platbands of such familiar Russian huts.
In addition, the project uses two types of plaster. One of them is more textured and charismatic, resembling clay with a natural earthy color. We used this plaster to fill in between the beams and on some of the partitions. On the other hand, on the walls, we applied a calm and light-colored texture of the mazanka.

The freestanding bar island draws the attention of guests with its contrast of stainless steel, concrete and natural materials.The stainless steel reflects all the colors, shades and textures, creating a mesmerizing effect.

The part of the counter where guests sit is made up of multicolored layers of concrete, which resemble a slice of earth and also reference archaeology and excavations. On the table top are embossed messages – runes. The same principle was used for the tables, which resemble primitive furniture in a cave.

在與客戶合作的過程中，我們逐漸意識到，對於本案而言，最重要的是打造一個能帶領賓客穿越數個世紀、沉浸於歷史氛圍之中的空間。設計運用多元材質與細膩工藝，營造神秘而富有古老韻味的場景，讓人彷彿走入一段被時間封存的故事。透過不鏽鋼材質折射出的流動光影、凝結於半透明樹脂之中的藝術作品，以及隱藏在室內各處、等待被發現的神秘符號，空間層層堆疊出探索般的體驗，使賓客彷彿穿越時空，置身於梅里安時代。

一樓規劃為主要廳區，結合吧台與開放式廚房，讓料理製作的過程成為餐廳空間的一部分，也成為吸引賓客目光的視覺焦點。二樓則延續整體氛圍，打造更為寬敞、舒適的用餐與社交場域，提供多元座席選擇，包括吧台座、沙發區、長椅、舒適扶手椅與大型公共餐桌，整體可容納64位賓客。地下室則配置廚房主要工作區與衛生間，使各項餐飲機能得以完整運作。

步入精巧而細緻的大廳，首先映入眼簾的是一座以石材堆疊而成的小型「山丘」。在昏暗燈光的映照下，粗獷的材質與交錯的紋理營造出神秘而原始的氛圍。仔細觀察便會發現，這些看似巨石的元素，其實隱喻著古代狩獵文化中的動物陷阱。每一塊石頭皆被賦予不同角色，其中一塊作為誘餌，另一塊以麻繩捆紮形成陷阱的覆蓋結構，另有石材則延伸並串聯各個構件，形成完整的敘事語彙。迎賓台藉由這套設計語言，探討人與自然之間的關係，以及古代部落如何依賴周遭環境與狩獵技術維繫生存。每一塊「巨石」都承載著獨特寓意，成為引導賓客深入空間的線索，也讓人在探索之間，逐步感受場域與歷史、自然及過去之間的深層連結。

整體餐廳空間如同一座承載時間痕跡的房屋，讓歷史意象與當代設計彼此交織。設計中特別強調小屋般的建築元素，保留原有的橡木橫梁，並搭配雕花木板，細緻的木作語彙與常見於俄羅斯傳統小屋的簷板相互呼應，為空間注入濃厚的地域與歷史氣息。此外，空間運用了兩種質感截然不同的灰泥，其中一種擁有更為粗獷豐富的肌理，質樸自然，如同原生泥土般，填入橫梁之間的縫隙及部分隔牆；牆面則選用質地柔和、色調淡雅的馬贊卡灰泥，透過材質與色澤的細微差異，豐富整體空間層次。

獨立式吧台島以不鏽鋼、混凝土與天然材質的鮮明對比，成為餐廳中的視覺核心。不鏽鋼表面映照周遭光線與環境色彩，隨著視角與光影變化呈現不同色澤、肌理與反射效果，為沉穩的空間注入流動而迷人的視覺感受。吧台座位區則以多層次彩色混凝土打造，粗獷的質地宛如從土層中挖掘出的岩塊，呼應整體考古與挖掘的概念；桌面刻劃的符文，更進一步強化神秘而古老的敘事氛圍。相同的設計概念也延伸至餐桌，透過厚實材質與原始形態的塑造，讓家具彷彿源自洞穴之中的古老器物，在現代餐飲空間中重新詮釋原始生活的痕跡。
